Ugali and chicken stew

So I haven’t cooked chicken for a while. If I don’t do it soon I’m going to hear about it, thus, this day is the day (^_^)

Chicken stew can be made in so many ways.  Everyone who makes it has their way, from an ingredient they always use to the order in which the ingredients get added.

it was so yummy! I often crave the ug and chicken combo.

I know the way my mother makes it, and that’s usually what I do but this time I decided to try something different. I didn’t read this anywhere, I just looked at what I had decided on a combination. The ingredients as follows:

4 onions diced
1 teaspoon of grated ginger
2 cloves of grated garlic
2 tomatoes chopped
3 teaspoons paprika
2 teaspoons ground cardamoms
1 teaspoon black pepper
1 whole chicken minus the breast meat (I purchased a whole chicken and cut it up, I’ve put the breast meat aside to use on another day)
4 table spoons of cooking oil
Salt to taste

Fry the onions, garlic and ginger in the cooking oil till soft, add the paprika, cardamom, and black pepper. Stir, then add the chicken. I pre-boilled the chicken in a separate pot with some salt and a few cloves, and cut it up to smaller pieces (the cloves were just to mask the smell, boiling chicken smells horrible!). Add some water, about half  cup.

Because the chicken is already cooked, it doesn’t take very long for this to be ready. Bring to a boil, add in the chopped tomatoes, then reduce the fire and let it simmer till the tomatoes are softening and blending into the stew.

If you pre-boil your chicken like I did, don’t stir too much. It tears up into shreds! Serve with ugly and veggies
