Egg and avocado mix

Last week I got a tip from El in a comment on the avocado on french toast post. The suggestion was to combine avocado with eggs, I tried it and it was awesome! There were no instructions so I made up something. I’ll probably do a few more versions of this idea.

boil the eggs

Yes, I boiled the eggs. It doesn’t sound appetising right now but you’ll like it a minute (^_^)

Ingredients:
2 eggs boils
1/2 a large onion chopped
1/4 teaspoon salt
2 pinches black pepper   
1 pinch cayenne pepper
1/4 teaspoon paprika
Juice of half a lemon
avocado

you will need a clean bowl for the mixing
chop some avocado, about the same amount as 1 boiled egg, add the chopped onion and the juice of half a large lemon
add the black pepper, salt, paprica and cayenne pepper
peel and chop the boiled eggs
ad to the bowl
mix with a fork, mix mix mix!
till all is nicely blended
spread on a slice of bread (buttered or not)
serve!

Yes, he gave me a funny look when I handed it to him, but he liked it (^_^)

I think I’ll throw in some dhania or other herb next time, and warm toast for sure.

  1. I will soo have to try this out.looks delish. you can also maybe try cook the egg and avocado like this :-
    scarmble eggs, add garlic, pinch of salt and abit of pilipili, heat oil in non stick pan, add eggs, push to middle till its well cooked, then flip to cook other side.Add avocado slices and grated cheese, fold in half, heat for a min or 2 more till cheese is melted and avocado is warmed.

      My mouth is watering just from reading the instructions.
      And it just so happens I’ve purchased some pilipili, something I never do.
      I’m trying this for sure!
