El’s avocado omelette

I was a bit nervous about serving my husband this one. He is not a fan of avocado, not like me. I didn’t tell him what was in it, I let him discover it while he was eating.

He was halfway through the meal before he even noticed there was avocado in the omelet! Then he looked at me and said “you put avocado in here?! I don’t think avocados are supposed to be cooked!” I said “I’m sure someone said that about pineapples, cherries and all the other fruit we cook and bake with!” Needless to say he was not amused.

But he finished all of his serving, and said it wasn’t bad, just the thought that there was avocado in it wasn’t settling well in his mind (^_^)

If you are not married yet and you haven’t thought about it, I’ll just tell you now: you will have to LEARN what your husband likes to eat! That doesn’t mean he’ll never eat anything other than what he likes, it just means you’ll have a learning curve in the kitchen. It’s not a bad thing, just a bit challenging.

OK, on to El’s omelet! She left the recipe in the comments of this post, here’s how it goes…  

first, prepare all the ingredients you need earlier on; 2 grated garlic cloves, 3 beaten eggs and some chopped chilli
and some grated cheese, I used mozzarella
first in the pan with a bit of oil is the garlic and chopped chilli, on low heat, do not let the garlic brown
once the garlic has sizzled a bit pour in the beaten eggs (with salt already added) and spread
while the egg is cooking slowly, prepare the avocado slices
once the egg looks stable enough to fold, on one side, place a layer of cheese, then a layer of avocado, then top with another later of cheese
then fold and cover so it can cook nicely on the inside. keep watch and turn it at least once
once it’s cooked, cut and place on a slice of buttered bread, I made it an open sandwich
yum!

 

Husband Rating: ★★★★★★☆☆☆☆

I think it would have been 7 stars if he hadn’t discovered the avocado. He finished it which is good. When he doesn’t like something he just doesn’t eat. Yes! it’s happens! I made porridge for breakfast once — that was a difficult morning!! I had to make him something else. That man just isn’t into porridge no matter how yummy I think it is.

It later came up in a conversation I had with his mother, she told me he has never liked porridge, even when he was younger he’d refuse to eat it.  “So he hasn’t changed!” she said while laughing!

So what has your husband refused to eat? Or if you are not married yet, what are you hoping he’ll like to eat as much as you do?

      waah! I posted this in such a rush I forgot to say! Pole!

      I L-O-V-E-D IT!!
      I am so making it again. Btw while I was making it I was concerned about how the garlic would make the eggs taste, but it’s yummy. The flavour is much more savoury than when you use onions. And then when you add the creamy avocado and cheese mix — perfect balance.

      I din’t use a lot of chilli, but a few notes of heat came through, I liked that too. Will use a bit more next time.

  1. that’s great you loved it 🙂 ……avocados are actually my favourite fruit so i really experiment with them with different foods…if i remember any other recipe for avocado I’ll make sure to info you 🙂

  2. am not married but i really hope the man loves meat…all kinds as much as i do…if i marry a vegetarian…*insert a fainted Faith*…but i wont die.
