Layered baked potatoes – Part 1

Have you ever had scalloped potatoes? Oh, they are sooo goood! I haven’t made them in a while though. I think the last time I made them is almost 4 years ago if not more.

I was reminded of them two weeks ago at a potluck lunch with some friends. One of them made something similar. His wasn’t creamy cheesy though, he layered the potatoes with tomatoes and,… I don’t remember what else he said. I think he might have said zucchini. But he topped it off with cheese for sure.

I decided to make something similar, layer in some of the remaining eggplant before it goes bad (^_^)  

So first I do a lot of cutting to prepare all the parts

the potatoes, cut them into thin slices, set aside in water
cut some zucchini into thin slices, set aside
cut some eggplant into thin slices
lay them out on a plate, sprinkle a bit of salt and set aside
fry 4 chopped tomatoes in a bit of oil with 5 grated garlic cloves
when they soften add a quarter cup of cream
let it sizzle for about a minute then take off the fire and set aside
slice some onions and fry in a bit of oil
add 2 grated carrots
when the carrots soften and begin to caramelise a little, take off the fire and set aside
wash some thyme and set aside
