Mixed vegetable soup with home made bread

Vegetable soup is one of the simplest soups to make. I say that because I don’t think I’ve made it the same way twice. It’s usually whatever I have that works at the time. All you need is a green veggie/root/legume/mushroom combo and some stock. Then you can season and spice it however you want. You don’t have to have all of them either.

lemon grass, washed and cut

For this soup I used onions, mushrooms, tomatoes, peas, broccoli and carrots, then lemon grass and basil for flavour.  

first, the 2 onions chopped in the pot with some oil, then while they sizzle,…
… mushrooms, about 15 to 20 of them …
… chop chop chop …
then add to the onions
peas washed and ready, they go in next with the lemon grass
in they go
after a about 2 minutes add 350ml of stock, or a cup. Let it come to a boil and bubble under low fire till the peas are cooked
meanwhile prepare the rest of the ingredients, 2 carrots chopped, broccoli cut and washed, 2 tomatoes cut into chunky pieces, and a few washed basil leaves
when the peas are cooled add carrots, broccoli and 2 cups of hot water. When the broccoli is ready (i.e. still crunchy, just blanched) it’s ready. Salt to taste
then add the basil and tomatoes, stir, wait two minutes for the tomatoes to soften then serve
served!
with a couple of slices of home made bread
