Mushroom scramble on buttered toast

Was in the mood for an omelet this morning. Opened the fridge and saw the leftover mushrooms and had an idea. I’ve never made an omelet with mushrooms before. There’s a first time for everything!

onions and tomatoes sizzle

So the ingredients are simple: onions, tomatoes, mushrooms, eggs!   

a few mushrooms left
I chopped up 5 or 6 of them, small
add to onions and tomatoes
sizzle sizzle
beat three eggs, salt them to taste and add them to the pan
it was supposed to be an omelet but it wouldn’t turn easy so I scrambled it (^_^)
I used up the rest of the baked bread, cut it into slices, buttered it
then toasted
and served the scramble on top, open sandwich, messy but fun to eat

didn’t taste the mushrooms 

It was nice but I didn’t taste the mushrooms much either,  I think the tomatoes were too much, they take over the flavour. Next time larger mushroom pieces and no tomatoes.
