Oatmeal raisin cookies

I found the most delicious looking cookies online last week. The blog is called Food Coma! She loves to bake. I’ve been wanting to make my husband cookies. He loves cookies. This recipe gave me a starting point. Plus I had oats that have been waiting around for something (I decided to try the so called “healthy breakfast” a few months back and I just couldn’t hack it! They don’t taste very good, or maybe I just don’t know how to make them right).

Here is the recipe I got from Food Coma, with my modifications:

½ cup softened butter
½ cup packed brown sugar
1 egg
1½ cups oat
¾ cup flour
¼ teaspoon baking soda
¼ teaspoon baking powder
a generous pinch of salt
2-3 ounces chopped fresh cranberries ¾ cup raisins
1/2 cup dark (or semi-sweet) chocolate chips. Nakumat was out! (-_-)

I doubled the recipe. Her site said it makes 15, I wanted 30 so I could share.

So first, cream the butter and sugar.

Then add the egg and mix again. In my case, 2 eggs because I doubled the recipe.

Then add the oats, flour, baking soda, baking powder and salt. Mix.

Then add the raisins and mix again

And it’s ready for baking! Butter some pans. Then spoon lumps and place on the pans. The lumps will flatten out while cooking so space them generously. The size of the lump will determine how large the cookies will be.

On the Food Coma site the instructions say 375°F  (190°C) for 20 minutes. It seemed rather high to me but it’s my first time making oatmeal cookies so I thought maybe the oats needed a higher temperature and more time to cook. I was right to be concerned. I should have watched more closely.

I cooked the last batch for 15 minutes and that was much better.

They both tasted OK.

15 minutes was enough for the oats.

But they were too dry.

I like the recipe because it’s simple. It’s a nice starting point. Next time I’ll adjust the temperature and cooking time, so that they don’t dry so much. Might even add a few ingredients.
