Rice and beans

An all around favourite. I haven’t met anyone who doesn’t like rice and beans.

Rice is easy, 2:1 ratio of water and rice respectively, plus salt to taste. A little oil when it’s the sticky kind like mine (^_^)

Then the beans. They need to be soaked in water over night, then boiled till they’re soft, or you can use a pressure cooker for about 45min. Salt them to taste when you pre-cook.

I have several recipes for beans because I cook them often, it’s boring if they taste the same every time. I leaned this method from my mother, the others I will post as I make them.

Ingredients:
½ a garlic bulb peeled and chopped
2 large onions diced
1 large grated carrot
2 tomatoes chopped (or you can use the tomato juice)

It’s very simple. heat up some oil in pot, throw in the garlic and onions, once they’re softened add the carrots. Then the beans, then the tomatoes. Let it simmer for a good while so that the flavours can blend nicely. Stir often and add water if it starts to get too dry. Taste for salt,  and add a little pepper. Serve with a side of avocado. I threw in some leftover spinach this time as well.

I really like the addition of a grated carrot, it helps to thicken the sauce, make it hearty. I don’t like thin sauces.
