Risotto from leftovers

We had some take-out a couple of days earlier, it was a whole chicken. As usual, the breast meat is always leftovers. Didn’t want it to spend anymore time in the fridge or I’d have to throw it out. I also had some rice in there,…. gave me an idea (^_^)

It’s risotto time! Or something like it.

Risotto is an Italian dish of rice cooked in stock with meat and veggies. My rice was already cooked so I improvised.   

add three grated cloves of garlic and half a large carrot, also grated
stir stir
while the carrots are softening, chop up the leftover chicken or whatever cooked meat you have
add to the pot, stir. Then add 1/2 a teaspoon of turmeric powder, some cayenne pepper and some black pepper, stir again. If it’s supper dry, add a bit of water, you want it moist but not runny
chop up about a handful of raisins and add them to the pot
stir, then add in the rice

the chicken and rice are already cooked, so once the rice is warmed up it’s ready to serve.
chop up some dhania, once the rice is warm, turn off the fire and fold in the dhania
sliced bread to serve with it
served!

This was really good! Had nice colours too. Can probably do the same with leftover pasta.
