Vegetable Confetti

So I thought my idea for the name of this side dish was completely unique! Ha! I’ve just done a quick Google search as I prepare this post hoping to get my ego stroked and … not so much.

800k + results!! At least it wasn’t over a million results right? (^_^)

I had been thinking about the idea of a colourful vegetable mix for a while but it wasn’t until Wanjiru and I were making these skewers that I decided it simply must be done! Those colours were just too yummy!  

The beauty of this dish is that you can make it from whatever mix of vegetables you like, the key is just to pick colours that look nice together.

When cooking, start with the veggies that need the most amount of time to cook. You also don’t want any of them to be soggy so pay close attention.

I started with the onions and a bit of cooking oil

then added the carrots when the onions softened

then the broccoli and cauliflower

then the sugar snaps and peppers, and sprinkled in some salt

Keep stirring often, and don’t wait for each veggie to cook before you add the next, you want them to all finish cooking at the same time. So have everything cut up and ready to go before you start.

add a sprinkle of freshly ground black pepper and serve immediately

It’s a nice crunchy feast. Some other veggies that I think will work really well for this are baby corn and zucchini. You could also throw in some mushrooms. What else would you add?
