Layered chocolate and lemon cake

Our nephew celebrated his second birthday last week. We had a small gathering of friends and family, and I baked the cake for the celebration. Well, I baked two cakes. OK OK OK! It was 3 cakes. One burned. Yes, I burned a cake. Most of the time when cakes go wrong they either sink or don’t cook all the way, mine burned! Ha!

Anyway, long story short, I had to make the chocolate cake twice!

there they are, baked and ready. Chocolate and lemon.

The lemon cake was the usual recipe, and the chocolate is another one that I got from my mother, not the same as the one I made last week. It goes like this…  

Ingredients:
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
3/4 cup cocoa
1+3/4 cup sugar
3/4 cup oil
3/4 cup water
3 eggs
1/2 water
1 teaspoon vanilla

Put the first eight ingredients in a mixing bowl and beat for 2 minutes. Then add the remaining ingredients and beat for another two minutes. And your batter is done! (^_^)

Pour the batter into a greased baking pan and bake at 180°C for 45 to 55 minutes.

I split my batter into two pans. I put most of it into one and a small amount in another, you’ll see why in a bit.

the water I used wasn’t hot, it was warm, so I decided to put the mix on the fire a little bit, but left it there too long. Don’t let yours bubble up like this.

Next, I layered the cakes,… first I have to make the chocolate cream/icing and the lemon glaze.

Chocolate cream:
3 tablespoons butter
2 cups icing sugar
1/5 cup cocoa
1/5 cup hot water

Mix with a whisk till smooth and creamy.

lemon glaze

The lemon glaze is easy too.

4+1/2 tablespoons of fresh lemon juice
2 tablespoons sugar

Simmer on low heat for 2 minutes

used the baking sheet pan edges to keep the knife in position as I sliced them for the layering
first layer, lemon cake, topped with lemon glaze and chocolate cream
them chocolate cake with chocolate cream
then, lemon, then chocolate, with all the yummies in between! 4 layers! and there’s one more
the chocolate batter was a bit more than the lemon, so I baked some in my heart shaped pan. Sliced it in half and placed the bottom half on top
then cover the whole stack with chocolate cream
shave some chocolate with a potato peeler
first over the cake
then shave a little more on the side
and sprinkle them all the way around on the bottom
then I wrote ‘2’ with the chocolate cream
and covered it with sprinkles!

So,… I’m looking for what to do with the burned cake. I found this link. He covers 12 different kinds of cake disasters! There are some great ideas in there, I would try some of them even with good cake just for fun.
