Dill meatballs

I’ve been MIA, I know. Things have just been hectic for the last couple of weeks. I haven’t stopped cooking though, just haven’t had the time to put up the posts till this last weekend. So you’ll be seeing them through this week.

The great news is there will be a post everyday this week!

On to the meatballs!

When I made these, the original plan was to save them till the next day and make a meatball sauce to go with spaghetti. Hubby would be coming back from a 1 day trip to shagz, I wanted to make a nice dinner. But it didn’t work out that way! (-_-)

By the time I got home that day it was very late, and he was very hungry. There was no way to make that meatball sauce fast enough, even with the meatballs prepared ahead of time. So I served them over leftover rice and pumpkin leaves

Here is how I made the meatballs…   

6 peeled and crushed garlic cloves
in go the the garlic, some chopped dill (a handful), some olive oil, and a 1/4 teaspoon of cayenne pepper
crush crush crush! till it’s pasty, set aside
in a mixing bowl, add 1/2 kilo of minced meat, 1/3 cup bread crumbs, salt, mix (with a fork, or with clean hands) set aside
beat one egg, add the pasty dill and garlic mix to it and beat again till it’s all mixed up
add the egg mix to the meat, mix
done! Now form the meatballs and place them on a foiled baking sheet/pan. Make them whatever size you prefer
them put in the oven at 180°C for 40-45 min. They should be cooked all the way through by then but check to make sure.
cooked! they smelled delicious when they were cooking! Great aroma!
served!

They were very good, very flavourful. Hopefully next time I’ll have enough time to make the meatball sauce. This was my second attempt at cooking with dill, the first was with the omelette. I like the dill,… would like something else to try it with.
