Easy breakfast quiche

Quiche is a very tasty breakfast dish, it’s basically like a baked omelet. It’s also very easy to make, the only thing that will take time is chopping up the ingredients.

As far as I’m concerned, if you add cheese and bake it, it’s a winner, every time!  icon-heart

You can use whatever mix of ingredients you want, don’t add too much stuff though, keep it uncomplicated. I once did a version with potatoes, bacon, some freshly chopped herbs and a few other things in addition to what I have in here… needless to say it was not quiche! It turned out really thick, and heavy. Couldn’t have much of it. The really good flavour notes you usually get in quiche were drowned out. It wasn’t terrible, just NOT quiche. So keep it simple.   

Ingredients:
6 eggs
1 small chopped onion
1/2 cup chopped pepper/capsicum
1/2 cup chopped button mushrooms
1 cup grated parmesan cheese
1 tablespoon cooking oil
Salt to taste
a little butter (for the baking dish)

Chop up everything that needs chopping and have it ready to go.

then in a medium sized frying pan, heat up the cooking oil a bit and add the onions and peppers.

I did half red and half yellow peppers. Play around with the different pepper colours just for a change if you make it frequently.

You can chop/slice the mushrooms in any way you prefer, i tend to like thin slices like this sometimes.

stir to mix them in. Do not allow the mushrooms to overcook, remember you are still going to bake for a while. So just about  a minute or so then take off the fire

Place in a mixing bowl and wait for it to cool completely. In the mean time you can beat the eggs (salt them as well), grate the cheese of you haven’t done so yet, and lightly coat your baking dish with butter. Preheat the oven to 180°C.

Pick a nice size backing dish, the one I used is square, 20cm. Round or rectangular is also fine, just needs to be small enough to get a nice spread of the mix so that it’s not too high and all the ingredients sink to the bottom, or too low that you get a thin crusty result.

Speaking of crusty, I didn’t use a crust for this quiche, it’s a crustless quiche.

I didn’t time the baking, I just waited till I saw the nice gold colour start to form at the top an i knew it was done. After pulling it out of the oven, let it cool a bit on the side before serving.
