Easy flavourful chicken wings

Hello! Karibu sana! I had taken a bit of a break to deal with some intense things happening in my life. But there is plenty to keep you busy in here, did you look at some old posts? Did you try one of my old recipes? I hope so, and I hope you enjoyed. For those who don’t know, this site goes waaaay back to 2011!! Yup! I have a 5 year blogiversay coming up.

Everybody loves wings, right? right? Well, not this girl. I have two issues with them. First I can’t stand chicken skin. All those prickly bits where the feathers were plucked just make me cringe. I’m not saying you should not eat the skin, by all means help yourself, don’t judge me and I won’t judge you. As a result, I always remove the skin, but that leaves me with flavourless chicken. The flavour on chicken wings is almost always just skin deep because it’s just in the sauce that the wings are coated in.   

Secondly, it’s such little meat! After all that work to remove the skin, I have to work again to get the little bit of meat off those bones. Nevertheless, I give you this chicken wing recipe. Why? Because I don’t just cook for me. There are people I cook for that I love very much, and they love them wings! (^_^)

This recipe is my attempt to get some flavour in the wings further than just skin deep. I think they will be enjoyed by everyone, even chicken skin haters like me!

So first thing is first, we add flavour to the wings. I first cooked the wings in garlic ginger, onions and salt to taste. Wash your wings and let them drain of all the excess water while you prepare the onion, ginger and garlic.

wash your wings and let them drain while you prep the onions, garlic and ginger
once the wings are  cooked through, drain them. Don’t over cook, the meat will start falling off the bones.

While the wings are draining, make some lemon juice from two lemons and mix with 2 to 3 tablespoons of honey. Heat it up a bit so that it mixes nicely. Feel free to throw in some chilli flakes if you like heat, or soy sauce to give it more of an asian flair or whatever else you’d like to flavour your chicken wings with.

Alternatively you could just lay them in the pan and baste with the lemon and honey mix. When you arrange them in the pan ensure that they don’t crowd too much, you don’t want them to sweat in the oven, you want then to dry a bit.

Place them in the oven at 280°C to 200°C on grill mode using the top tray. Remember they are already cooked, this is  just to dry and brown a bit so they will not be in there for long. Monitor closely, once one side has the desired colour, turn over and brown the other side. If you basted in the pan, you may want to baste the other side when you turn.
