Layered baked potatoes – Part 2

Next, the layering.

Once everything is cut up and ready, this is the easy part. You can layer the parts however you want really. How many layers you put of each depends on which flavours you want to be stronger.

Here is what I did (^_^) I wasn’t thinking much about flavour though, I just thought of that while I was typing this up, I think I’ll do more creamy tomato next time.

butter the dish and put a bit of the creamy tomato sauce on the bottom

Use a dish that has a cover, preferably, if not, you’ll need some foil to cover it for the bake.  

then a layer of potatoes and a sprinkle of thyme
then a layer of eggplant
then a layer of the carrot mix
then another layer of potatoes
then a layer of zucchini
then another layer of eggplant (this was all the remaining eggplant)
then a layer of the carrot mix (this was all the remaining carrot mix)
the a layer of zucchini (All the remaining slices)
a layer of all the remaining creamy tomato sauce
top with a layer of the remaining potatoes
and grated parmesan cheese
cover and bake in the oven at 180°C for 45 minutes, then uncover and continue baking for another 30min
done!
served!

He ate half of the dish for lunch!!!  I thought it was enough for 4 meals at least, so there would be leftovers for later! Sheesh!
