Peanuts – Method 1

Nuts are my favourite snack. Peanuts, almonds, cashews, pistachios.

I’ve been asking my Sisters and Aunties how they make their nuts. There are so many methods! I’ll be trying some of them in the next weeks, including one I learned from my mother.

I’m not sure where I got today’s from, I think it was from one of the Aunties. I may have to call everyone again just to confirm.

So, first go through the nuts and remove all the rotten and eaten nuts. Then wash the nuts. Sometimes they’re dusty. Depending on where you get your nuts, it may or may not be necessary to pick through them and wash.

Then soak in salty water for about 5 minutes, drain and place on tray to dry. It took a couple of days for mine to dry completely. I think most people lay them outside in the sun to dry, they probably dry in one afternoon.

Can’t remember exactly how much salt I put in that water. I think it was 3 teaspoons.

Then I put them in pot and cooked them for 20 min on medium heat. Stirring very often. If you leave them sitting too long the ones on the bottom start to burn.

After 15 minutes, start tasting to see how far along they are. If they’re still very raw, you may need to cook them longer than 20 minutes. Then let them cool before serving.

I liked them a lot. The salt was just right. Peanuts are often cooked with too much salt, most people don’t notice because they’re used to it. I think it masks the true flavour of the nuts. Have you ever eaten raw nuts? If you haven’t, take a few of them raw next time before you cook them. Once you know their true flavour, salt to enhance, not to mask (^_^)
