Rice with mixed veggies

Taking a break from meat (^_^)
Not my favourite thing to do but I try to make sure we’re not eating meat every single day. There was a time when I tried cutting down on chicken — a complaint was filed! I had to bring it back (^_^) Speaking of which I may be hearing about that again soon.

serve with avocado – like the one in the corner over there in the back (^_^)

The rice is just plain, nice and easy.
The veggies are also very simple. They go as follows:

1 head of cauliflower
1 head of broccoli
1 large onion
2 carrots
2 zucchini

Wash very well and chop them up. Try keep the sizes similar, especially with the onions, carrots and zucchini. After you break apart the broccoli and cauliflower, blanch them, drain, run under cold water to cool them off so they don’t keep cooking, then set aside.

Cook the chopped onion in some oil over medium heat, when it starts to soften, add salt to taste, and some water (about 100ml). When it starts boiling again add the carrots. Wait a little while, then add the zucchini, cauliflower and broccoli. Give a quick stir to mix, then cover.

Don’t let it cook too long, the carrots should remain crunchy.
Serve with avocado. My husband didn’t want any this time

Oops! I forgot about the rice, it dried a bit too much. Any more time and it would have burned (-_-)
