Sausage soup

This is the first meal I made after the baby was born. It was my first time doing anything significant in the kitchen after about four or five weeks. I didn’t want to be in there standing for a long time so I figured a light soup would be quick.

I thank God for family! Up until this point they had been feeding us, hosting us and taking care of us, stuffing our fridge with yummies! God bless them.

It was sausage because there was no other meat. Hubby stepped out to do some grocery shopping but I hadn’t prepared a list so the only meat he came back with was sausage!    

It’s a very simple recipe. No fuss!

First, cut up  6 sausages into bite sized pieces and fry them till cooked, let them sear a bit to get some colour. Then add a sliced onion, 3 cloves of sliced garlic and 3 or 4 small potatoes, also cut into bite size pieces and.

To shorten the time, you could parboil the potatoes separately as you cook the sausages.

Then add stock, water or both (half and half). Bring to a boil then reduce the heat to medium and allow the potatoes to cook.

Once the potatoes are done add two chopped carrots, then season with salt to taste. Then add a teaspoon of paprika, half a teaspoon of ground mustard, and cayenne pepper to taste.

Once the seasoning is stirred in, add slices of a fresh tomato and turn off the heat. It’s ready to serve! See? Simple!

Sprinkle each serving with a bit of dried oregano and basil (will serve 2, 3 at most, if you use the same quantities).
