Spaghetti, omelet and dill

We had the last slices of bread the previous day, and there was no time to go get more for breakfast. Had to improvise. I would have made uji but he wasn’t up for it this morning. He was also hungry, and when he’s hungry he doesn’t like to wait too long for food, so crepes/pancakes/scones were out!

I looked in the fridge, saw the left over spaghetti and had an idea (^_^)

Egg noodles came to mind, but that’s something else entirely. The thought of it though gave me the idea for this dish.  

make the plain omelet
chop it up and set aside
To warm up the spaghetti, I poured in some hot water and let it sit for a while
then drain and combine with the eggs in a mixing bowl and toss
I remembered I had some dill. I have never used dill before, thought this was an opportunity to start. Chop up some and added to the spaghetti, toss

While warming the spaghetti I realised the dish would be too dry. So I started making this sauce, not too much, just a little to coat and add a bit of moisture or flavour.

chop three cloves of garlic
fry the garlic in very little oil, add a bit of water so that it doesn’t burn
cut up some yellow pepper
add to the garlic with a bit of salt and black pepper
if it has dried up ad a bit of water so the yellow pepper can soften as the water evaporates
add a tablespoon of cream and half a teaspoon of paprika
once it has reduced it’s ready for the spaghetti
add and mix with a fork

The dill has an interesting aroma and flavour. I can’t say I don’t like it, I think I just need to find an appropriate recipe for it. Otherwise it was OK.
