I started experimenting with butternut late last year and I still am. This particular meal was created late last year, so this is a long overdue post. If you are following on Instagram then you’ve already seen the roasting butternut in the oven instructions. Sometimes I share recipes there too. Especially when my husband is using the camera and I have no way of taking good photos for the blog (^_^)
This is one of the first recipes I tried. After roasting it the first time I realised that it is probably the best way to cook butternut. The sweet notes in its flavour pop so nicely! So good that I decided to pair it with something salty for breakfast. You should have seen my husband’s face when I told him we were having butternut for breakfast!
Select a butternut that is small enough for one half to be enough for one person
Roast in oven for about 3o minutes at 180°C. While they’s cooking you can prepare the eggs and mushrooms…
If you are not keen on having garlic that early in the morning (I simply just love garlic!) just sauté the mushrooms in butter with a bit of salt. If you don’t mind the garlic in the morning, use one of two cloves, depending on the amount of mushrooms, don’t let the garlic be overwhelming.
And then scramble some eggs, just the war you like them.
