This one was exciting to do. The preparation took a while but it was all worth it. I would do it again. Now I have to think about how to outdo it for the next one (^_^)
Ingredients as follows:
4 eggs
1 tablespoon baking four (flat)
4 table spoons milk
2 collar bacon strips, cut to small pieces
1 onion, diced
½ a green pepper, chopped
½ a red pepper, chopped
½ a yellow pepper, chopped
One tomato, sliced into wedges
Some cooking oil
Salt to taste
Fry the bacon in a pan, dry, without any oil. When cooked, set aside.
Add the cooking oil to the pan and heat up. Reduce to medium heat, add the diced onion and chopped peppers, spread evenly and cover. When they start to soften, add the tomato wedges, spread evenly. Cover again to let the tomatos soften as well.
In the mean time, beat the eggs, flour and milk in a bowl. Salt to taste. Tomatoes should be soft by now, pour in the egg mix evenly, then sprinkle the bacon on top. Cover.
Now… I usually wait till the bottom hardens a bit then I turn it. This time it was too heavy to turn whole, had to do it in pieces (^_^)
Serve with lightly buttered toast.
