Baked French toast

I decided to try a different kind of french toast on my husband for this morning. I heard of baked french toast about 6 years ago. It just randomly popped back in my mind, so I went online to look for recipes. Found a lot of them at the myRecipes.com website. Baked, casserole, soufflé.

I looked at several recipes but i just didn’t have all the ingredients for any one of them so I made one up based on what I’d seen. Mine goes like this…

Ingredients:
400 ml whipping cream
1 cup heavy cream (didn’t have cream cheese)
1 cup milk
6 eggs
½ teaspoon of ground cardamom
¼ teaspoon of ground cinnamon
2 tablespoons vanilla extract
3 table spoons honey
2 table spoons icing sugar
a little butter (for the pan)

Mix all the ingredients and butter the pan. Oh, missed one thing,… you’ll need bread. Most recipes said French bread but I saw one that said unsliced bread. So I think any unsliced bread will do(as long as it’s not too light). Cut up the bread into chunks and arrange in the buttered pan. Pour in the mixture evenly and let the bread soak in it (don’t fill to overflowing, just enough to cover and soak the bread nicely)

I baked it in the oven, uncovered at 180°C until it looked dry and was browning nicely (maybe 30 to 45 min maybe). It smelled like a dream! It puffed up nicely too. I served it with a sprinkle of icing sugar. The flavour was great! but the bottom hadn’t dried up nicely so it was a touch soggy (-_-) Need to figure that out,… If I had left it in there any longer it would have burned,… so maybe a little less of the mix next time.

Sweet in a good way, not overly sweet. But too soggy, would have preferred it dry and crispy with tea.
