My second garlic and mint adventure didn’t go so well. I usually stir fry spinach in some garlic and oil, so for a change I did it with the garlic and mint marinade. I didn’t mind the taste too much but he took one bite and pushed it to the side of his plate. *Sigh*
So this time I’ve rubbed some chicken with it. Added some salt to state and baked in the oven at 200°C for an hour (45min covered + skin side down, 15min uncovered + skin side up to brown)
Served it with Sweet Potato Wedges . Forgot to plan for vegetables on this one (^_^)
I’m a Luhya, can’t lose with chicken! Liked the sweet and salty combination with the sweet potatoes.
