Yes, pesto makes a great marinade for any meat. Combine that with all the different ways you may want to cook the meat (roast, BBQ, fry, stew etc) and you have enough dishes to try out for at least a month.
The great thing about salad is it doesn’t require a lot of meat. When storing away your meat in the freezer, I suggest packing some salad size portions. No need to defrost half a kilo of meat just to get a small cut for a salad.
This will also save you a lot of time when it’s time to defrost. I prefer to defrost meat in the fridge (if I’m using it a day later) or just in some water at room temperature, the small portions defrost faster.
Faster Meals Tip 3: Marinate ahead of time. Either in the morning before you leave the house or the night before and store in the fridge. Even better, you can store the meat in the freezer already marinated, so all you do in the morning is pull it out to defrost
