It’s matoke time again! Yes, my Mother-in-law has brought me some again, she recently came back from shags (^_^)
Ingredients:
matoke
sweet potatoes
4 medium sized onions diced
3 tomatoes chopped
some cooking oil
2 medium sized carrots
2 medium sized zucchini
+ one more onion for the veggies
I basically doubled the amount of onions and tomatoes I would usually use. Fry the onions till soft, add the peeled, cleaned and shopped matoke and sweet potatoes, then throw in the tomatoes onto. Add 200ml of water (or whatever is good for your quantity of matoke and sweet potato) and prickle some salt to taste. Cover, lower the fire, and let it cook slowly. Stir occasionally.
While that was cooking I sliced the carrot and zucchini into ribbons. I used a potato peeler. A cheese peeler would probably work as well. I have a 5 sided grater, and one of the sides has the huge slicers, I tried it but it was too difficult, the sizes weren’t even and it was hard to slide the veggies across.
Once they’re ribboned cut the onion into long slender pieces, fry in some oil, when they’re soft, add the the carrots in first. When they start to soften, add the zucchini ribbons and salt to taste. As soon as the zucchini soften a little it’s ready.
I served it with some leftover lamb ribs from the other night.
