On this morning I woke up excited to use the pesto! Just couldn’t resist trying it in an omelette.
The versatility of pesto is awesome,… once you have it, you can use it as a marinade, mix it with cream cheese to make a nice dip for something (fish strips, fries), add it to whatever stew you’re making to give it a flavour kick. I’ve even thought of adding it to bread dough!
I used what was labeled as “natural cheese”,… bought it a while back, wanted to try it. But I suggest one of those pulling cheeses, mozzarella or provolone.
It was really really good! Hubby is not into cheese as much as I am, he opted to have a slice of fruit cake and tea. He asked Aunty Mwende to bake him her famous fruitcake over the holidays, he finally got it and the man was elated! It was his snack and breakfast till it was finished!

I haven’t baked in a while, I think he misses having a fruit cake in the house. I will make one soon.

It’s very easy to make, and stores well in the fridge.
Let me know how it works out for you. Remember to add olive oil till you get the consistency you want, this one was pretty thick!
