Raisin pancakes

Dried fruits get added to a lot of stuff but I never thought to add them to my pancakes until I saw this post.

I was inspired. I modified my pancake recipe to go well with raisins. I usually use a very simple recipe, it’s quick and no fuss: one egg, baking flour water and salt. mix to the right consistency and that’s it. I don’t put sugar in the mix because I serve them with honey most of the time. It would be too sweet for me.

But these were just for hubby, especially with the raisins. So, I added 1 tablespoon of brown sugar, 1 teaspoon vanilla and 1/4 cup milk.

How much water you use depends on how many pancakes you want to make. Then add a teaspoon of salt, the milk sugar and vanilla. Whisk. Then start whisking in the flour a couple of tablespoons at a time till you get the right consistency — which is thick but still runny.

doing this the usual way wasn’t working. I use a measuring cup to pour the batter into the pan but the raisins were getting stuck at the bottom. Had to spoon the batter into the pan.
next time I’ll chop the raisins smaller, they stuck out a bit too much I think.

I have to admit, they look funny. The raisins look like growths coming out of the  pancakes! But they taste good, that’s all that matters. Better than the reverse.

Which reminds me of my experience with brussels sprouts! They look like cute little cabbages, but they have such a horrible bitter taste, the first bite was such a rude awakening that I’ve never tried them again.

    This recipe I have to try. How did I miss it on Leo Tunapika? Will do a collabo of both to see what it turns into.
