My husband likes the potato wedges at Java House. He would normally order the regular fries but the first time he tried the wedges he really liked them. And it’s been wedges ever since! Thankfully I was present to note the switch. He is also not the biggest fan of sweet potatoes. I could eat them all day but he’s almost the total opposite. So I decided to see how he’d like the sweet potatoes as wedges.
I have no idea how they do their wedges at Java House so I just made it up. I mentioned to @mel_wakhu that I was going to try this and she suggested I bake instead of fry because it’s healthier. That was excellent advice! Thank you!
So, peel and cut the sweet potatoes into a desired size, wash, place in an oven pan lined with foil. I debated what spices and herbs to use for a while then I turned to the time tested method: smell it and match the colours in your head! So I went with tarragon, its sweet notes match the sweet potatoes in my head (^_^). I added sprinkles of nutmeg to bring some balance to the sweet and paprika for a a nice kick, and a little sea salt.
Cover with foil and bake in the oven for 1¼hrs at 200°C (as usual, 55min covered, last 20 min uncovered to brown and dry a little so they’re not soggy).
I didn’t taste much of the paprika, will definitely add more the next time. But I think they turned out well, very tasty. Served it with Chicken in garlic and mint.

I agree! I’ve had a couple sweet potato dishes made with cinnamon, just haven’t tried them myself yet!
