I have never been very good at cooking fish, mostly because I hardly do it. It’s not even top of mind when I go to City Market. The order is always lamb, chicken, beef. Occasionally I throw in goat,… but not fish. My husband on the other hand really likes fish, he started asking for it so I bought some. He cooked the first batch, it was very good (^_^). So I decided to try one of my favourite marinades on the second batch: rosemary & garlic.
Ingredients:
2 tilapia fillets
1/2 bulb of garlic
3 rosemary twigs (12 cm tall, wash thoroughly and pull the leaves off)
3 tablespoons of cooking oil
Salt to taste
Peel the garlic cloves and blend with the salt, oil and rosemary till you get a nice smooth pulp (can also chop to tiny pieces then mix with oil and salt, that’s what I did). Rub it on the fillets, cover both sides and let sit for ten min. Heat up a frying pan (don’t put any oil in it, the marinade already has oil, but don’t let it get smoking hot). Cook the fillets till well done.
