French toast with orange and berry topping

Berries are really expensive. Even the few that are not imported are still expensive! When I’m buying fruit I tend to just skip them more often than not. I look at the little boxes and just imagine that I could eat them all in one sitting, versus the number of bananas or oranges that I could get for the same price that I would eat for the next week or two. Plus they don’t store for very long, they get mouldy pretty fast even in the fridge.

After the success of “crepes and berries” I had a aha! moment. I could make sauces to top pancakes, french toast, waffles and many other things that my husband likes for breakfast. So I decided to try something with french toast…

I haven’t had much success with other people’s french toast recipes so I made up my own.

Ingredients:
2 eggs
150ml water
5 tablespoons heavy cream
2 tablespoons sugar
a pinch of salt

bread and mix ready

I was out of milk so I improvised with heavy cream and water! (^_^) It worked out really well!   

heat up some oil in a pan, soak both sides of the bread slices then place in a pan. Sizzle sizzle!
while the toast continues start preparing the sauce. Goose berries chopped in half
with dried cherries and blackberries
oranges cut in half, will reduce the juice in the pan to make a syrupy consistency
some toast is ready
when all the toast is done, use the same pan for the berries
squeeze in the oranges, if not using seedless oranges remove the seeds first
add two heaped teaspoons of icing sugar
let it sizzle till it reduces to a syrupy consistency
arrange the toast as you like
top with the berry syrup goodness and feast! (^_^)
served!
