I started this a bit late and I was already tired from the day. Didn’t want to spend too much time standing in the kitchen watching an stirring! Ovens are awesome (^_^)
Ingredients:
Lamb ribs
1/2 bulb of garlic (peeled and grated)
potatoes (peeled and cut to desired size)
butternut ( about half the amount of potatoes in quantity, peeled, cut)
tarragon
coarse sea salt
paprika
cooking oil
Place the ribs into a foil covered oven pan, drizzle some cooking oil on it and rub it with the grated garlic. Doesn’t have to be completely even, just get it everywhere. Sprinkle some of the coarse sea salt on both sides, cover with foil and place in the oven. In another foil covered oven pan, place the potatoes and butternut, drizzle some oil over then, sprinkle some tarragon, a generous amount of paprika, and some sea salt. Mix them around a bit so that they’re coated nicely. Cover with foil and add to the oven.
The great thing about this is they cook at the same time so I can walk away for a while and rest. Turn the oven up to 200°C and set a timer to ring in an hour. They don’t need to be checked. When the hour is up, uncover them and place them back in the oven so they can brown a little. About 10 to 15 min, keep watch so they don’t burn. You will have to turn the ribs to get both sides.
I got to the end and realised I hadn’t planned for a vegetable! (-_-) So I sliced some tomatoes, just so there was something to have on the side.
