I decided to try this again without the tomatoes. Plus I didn’t have enough of them left for a full meal. So just a little bit of onion and the sliced mushrooms.

Beat the egg with salt to taste. Spread the mushrooms in the pan as evenly as possible then gently pour in the beaten egg.

This time I could taste the mushrooms. Even feel their chunky texture. Very nice.
