I made this for a lunch we had with a group of friends on Sunday. Each of us always contributes a dish. The food is always plenty of fun, but not as much as the company (^_^)

Decided to spice up the rice with raisins I made a while a go. I added a few things as follows:
3 cups rice
6 cups water
2 onions, diced
1 tablespoon butter
some cooking oil
1 carrot grated
2 bay leaves
½ a teaspoon ground nutmeg
1 teaspoon ground cinnamon
2 teaspoons cumin seeds
2 teaspoons turmeric
1 cup of raisins
Salt to taste

Fry the onions and carrots in the cooking oil and butter with the bay leaves. Cook with medium heat until the carrots and onions caramelize.

Add the cumin seeds, turmeric, cinnamon and nutmeg. Stir. Add 6 cups of water, bring to a boil.

Prepare the rice. I buy my rice in large gunia bags, so I need to look through it for husks and stones then wash it.


Once the water comes to a boil, add the raisins, salt and the rice. Stir.


When it starts boiling again, turn the heat to low, one more stir and cover.
Keep it on low heat till the water dries up and the rice is cooked.

Took it for lunch. There was some lovely cheesy vegetables and coconut chicken stew. Went nicely with the rice.
