Combining colours can make really tasty, simple dishes. The pasta is a linguini (spaghetti or capellini/angel hair would also be fine). Cook as instructions say on the pack. Once the pasta is ready drain it and keep it covered. While the pasta is cooking you can begin to prepare the following ingredients:
1/2 onion(chopped small)
3 cloves of garlic, grated
1 yellow pepper (chopped small)
1 red pepper (chopped small)
Some parmesan cheese, grated
3 fresh sage leaves, chopped small
4 table spoons cooking oil
1/2 teaspoon nutmeg
salt and pepper to taste
These don’t take very long to cook so the pasta needs to be ready first. When it is, heat up the oil in a pot, then reduce fire to medium heat. Add the garlic and onions. Stir often, don’t allow them to burn/turn brown, just want them to soften. Then add all the red and yellow pepper, nutmeg, salt and pepper. As soon as the peppers start to soften it’s ready. Don’t want them to cook completely, they need to remain a little crunchy.
Into a mixing bowl, serve some pasta (in my case, enough for two). Add in all the pepper sauce and fresh sage. Use a fork to mix it all together. If the pasta has been sitting out for too long and has gone cold, warm it in the microwave a little before mixing with the pepper sauce.
Add the desired amount of grated cheese, mix and toss around a little, then serve.
Husband Rating:
appetizing colours. Nice aroma. Good flavor.
This was the first time I used sage from my garden. I liked the flavor, but it was light. I think 6 large leaves would be better.
NOTE: half a pack of the linguini and the above ingredients was enough for two people for one meal only.
