Eating vegetables — green things specifically — does not come easy for me. I often force myself to eat them. Sounds crazy, I know! I’m a foodie, I cook a lot and I run a food blog. But I’ve been pushing myself to venture outside of my usual go to greens. It’s going pretty well I think.
Asparagus! Have you ever tried them? Well here’s a good recipe if you decide to. After several attempts at cooking it I’d say this is the best so far.
Keep the heat very low, the lowest setting possible, and stir often till they turn golden brown
Then turn off the heat and set aside. You could actually do the onions while the asparagus is in the oven. I started with then because I wanted to make sure they didn’t blacken. If you are a good multitasker though it can save you some time.
Next, preheat oven to 180°C. Wash the asparagus and cut off the whitish bottoms, grate the garlic and grind some black pepper.
Place in preheated oven, centre tray, for 15 minutes
I think the flavours are great together, the salty garlicky asparagus agains the sweet onion flavour… hmmm.
The only down side is the bunch had both slender and thick stems. Try to pick one that has mostly the same size, a nice medium thickness. Otherwise the little ones get dry, or if you reduce the cook time, the thick ones don’t cook.
