Shiro wa Mogee: Pizzafied chicken breast

I get inspiration for my meals from the internet, food channels on tv and friends. A lot of times, after watching a TV show I immediately want to try the recipe but rarely have all the ingredients in the kitchen so I improvise.Ā This dish is from a show I saw on the Food Network, they called it “Pizzafied chicken!” If you Google it you’ll find many variations, this is mine, based on what I remember with some additions of my own. It is very simple to make.

The basic idea as the name suggests is to use the chicken breast as a pizza base instead of bread.Ā 

You will need:
3 chicken breasts
2 tablespoons olive oil

For the marinade:
Ā½ teaspoon black pepper
Ā½ teaspoon salt
Ā½ bulb of crushed garlic
2 tablespoons light soy sauce Ā Ā 

For the topping:
Onions
Spring onions

10 cherry tomatoes
Ā½ cup of grated mozzarella cheese
3 tablespoons pasta sauce (can be substituted with pureed tomatoes)
Dried oregano (optional)

begin by making the marinade, first crush the cloves of garlic
add the light soy sauce, salt and black pepper

I recently learned that there is ‘light soy sauce’ and ‘dark soy sauce’ ā€” the light is for white meat, and the dark is for red meat. Some knowledge picked up from a cooking show šŸ™‚

mix
dip the chicken breasts into the marinade, coat evenly
and leave to rest for 5 minutess
while the chicken is marinating cut some spring onions and chop some onions for the topping
heat the olive oil in a frying pan, place the chicken breasts in. I used a wok, but any frying pan will do. Keep the heat between medium and low, let the chicken cook slowly, do not cover
while the chicken is cooking, slice some cherry tomatoes
once the chicken is half way cooked from the bottom up, and the bottom side has some nice browning, it’s ready to turn

Turn the chicken only once, and only after the bottom is done.

in another pan, fry the chopped onions and spring onions in a little bit of oil on medium heat
add the chopped ham. Don’t cook this mix for too long, just about 5 minutes. Then set aside
for the sauce, add 4 tablespoons of pasta sauce or tomato pureeĀ to theĀ remainingĀ marinade, mix, then set aside
wash a few leaves of lettuce, chop and set aside

Once the chicken is cooked on the other side you may begin to add the toppings.

starting with the sauce, spread evenly on the chicken breast
then some grated cheese
then the onion, spring onion and ham mix
then top with a more cheese and the chopped cherrie tomatoes
finally sprinkle some dried oregano on top
and cover to allow the cheese to melt

If you have a cover for your pan, use it. My wok doesn’t have one so I improvised with some foil. You just want to cover it for a couple of minutes so the cheese can melt

then it’s ready
you could use the remaining lettuce and cherry tomatoes to decorate the plate šŸ™‚
