Spaghetti and leftovers

I had a few potatoes, some meat and veggies left over from the previous night. I did this with spaghetti but I think it would work well with rice as well.

First, I made the spaghetti, while it was cooking I separated the meat and potatoes from the veggies in the storage container and chopped them up.

spaghetti ready! drain, set aside
chopped the beef and potatoes to smaller pieces
to freshen up the flavours a bit I fried some onion and green pepper
when the onions softened, I added the meat and potatoes, remember they’re already cooked so this shouldn’t take very long, once they warm up they’re good.
add two tablespoons of cream
stir
add the cooked spaghetti and mix
warmed up the blanched veggies in the microwave and served!

Leftovers are often tastier than when the meal is fresh. My favourite meal to eat as leftover is rice and beans.

  1. Well, with me if it’s spaghetti and veggies, i normally refresh and combine just like you’ve done. But when plain rice is left over I normally prepare egg fried rice and throw in whatever veggies that were left over not forgetting a splash of soy sauce to add more colour and flavour.

    Day by day you inspire me to start my own cooking blog.
