Wow that year went so fast! I totally enjoyed it though, I hope you did too… at the very least I hope you ate well (^_^)
I’ve actually just thought about how what we eat every day needs to matter. Meals tend to be the last thought when we get too busy. We plan them too last minute to eat well. If there was to be slide show of “my year in food” what would it look like? Would it make me smile or would it make me want a do-over? I definitely have some patches that qualify for a do-over!
And it’s not about how fancy the meal is, it’s just about healthy. Healthy is simple, and always cheaper in the long run! When people meet me in person the question I get asked a lot is “how do you manage to cook like that everyday?” — The answer is, I don’t cook like this everyday! I have my staples that I cycle through once a week or once every two weeks. Rice and beans, green grams and chapati, simple beef stew with rice and veggies, fried lamb with plantain and roasted veggies, matoke, ugali with chicken stew and sukuma… etc etc — repeat! When I’m really feeling lazy — ugali and mala! Yes, that one happens in my house too and I don’t think it needs a do-over! The do-over days are the ones where a bag of matoke crisps was dinner, or a box of butter cookies (and they’re oh so yummy!) and tea was for breakfast.
I don’t know about you, I definitely want less “do-over” days next year. But you’re not here to read about that so I’ll move on.
