Tilapia & Matoke

4 / 29 / 166 / 14 / 16

Matoke with beans

2 / 22 / 126 / 3 / 15

It’s matoke time again! I could eat matoke almost every day. But not hubby. So I try to space out the matoke dishes, although I think I waited too long this time.

10 / 29 / 112 / 9 / 12

This is a Ugandan dish. I learned about it recently from Lydia. She studied at Makerere University so she lived there for several years. Traditionally, the matokes are cooked with banana leaf stalks until they’re very soft. Once ready the matoke is wrapped in banana leaves and often served on them. I don’t have any… Read More

Lamb strips with fried plantain and kachumbari

10 / 22 / 114 / 25 / 15

It’s always nice to have a dinner that comes together quickly. It will be even faster if you marinate the lamb in the morning and leave it in the fridge for the evening

matoke, potatoes, sweet potatoes & butternut in one pot

Matoke does not have to be boring and it it doesn’t have to be cooked alone, it plays very nice with a few roots mixed in. Try this mix and add some flavour to your matoke night days.
