slices of whole grain bread
1 small onion
1 small tomato
2 eggs (beat and salt to taste)
Cut the onion and tomato into rings, cut some of the green pepper into strips. Put the onions in the pan with some cooking oil, let them get soft before adding the tomatoes and green peppers. Once the green peppers are soft add the egg and spread evenly, turn down the fire to low and let it cook slowly. Once it sets well enough flip it. When done, fold in half to serve.
I like it when the onions get crispy and burned a little, adds a nice flavour (^_^)
